For the Crust:
- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups semi-sweet chocolate chips
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper
- Beat cream cheese with powdered sugar and lemon juice until smooth, then chill for 30 minutes
- Cream together butter and sugars until fluffy, then beat in eggs and vanilla
- Whisk together flour, baking soda, and salt, then gradually mix into wet ingredients
- Fold in chocolate chips, then chill dough for 30 minutes
- Scoop 2 tbsp of cookie dough, flatten slightly, place 1 tsp cheesecake filling in center, then top with another 1 tbsp dough and seal edges
- Bake for 12-14 minutes until edges are golden brown
- Cool on baking sheet for 5 minutes before transferring to wire rack
