Cheesecake Stuffed Chocolate Chip Cookies

Decadent chocolate chip cookies with a creamy cheesecake center, creating the ultimate dessert mashup.

For the Crust:

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups semi-sweet chocolate chips
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper
  2. Beat cream cheese with powdered sugar and lemon juice until smooth, then chill for 30 minutes
  3. Cream together butter and sugars until fluffy, then beat in eggs and vanilla
  4. Whisk together flour, baking soda, and salt, then gradually mix into wet ingredients
  5. Fold in chocolate chips, then chill dough for 30 minutes
  6. Scoop 2 tbsp of cookie dough, flatten slightly, place 1 tsp cheesecake filling in center, then top with another 1 tbsp dough and seal edges
  7. Bake for 12-14 minutes until edges are golden brown
  8. Cool on baking sheet for 5 minutes before transferring to wire rack
