Cheesecake Stuffed Baked Apples

For the Crust:

  • 4 large apples (such as Honeycrisp or Granny Smith)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 cup graham cracker crumbs
  • 2 tbsp butter, melted
  • 1 tbsp brown sugar

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Core apples, leaving the bottom intact to hold the filling.
  2. In a bowl, beat cream cheese, granulated sugar, egg yolk, vanilla, and cinnamon until smooth.
  3. In another bowl, mix graham cracker crumbs, melted butter, and brown sugar.
  4. Fill each apple with cheesecake mixture, then top with graham cracker mixture.
  5. Place apples in a baking dish and bake for 25-30 minutes until apples are tender.
  6. Let cool slightly before serving.
