Cheddar Cornbread Muffins

For the Crust:

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/4 cup granulated sugar
  • 1 cup shredded cheddar cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together flour, cornmeal, baking powder, and salt.
  3. In another bowl, mix milk, melted butter, egg, and sugar until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the shredded cheddar cheese.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 15-18 minutes or until a toothpick inserted comes out clean. Let cool slightly before serving.
