Carrot Cheesecake Bars

A delicious twist on classic cheesecake with the sweet flavor of carrots and warm spices.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 cups grated carrots
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Mix graham cracker crumbs and melted butter. Press firmly into the bottom of the pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla, cinnamon, and nutmeg.
  4. Fold in grated carrots. Pour mixture over the crust and spread evenly.
  5. Bake for 30 minutes or until the center is set. Let cool completely before cutting into bars.
