Ingredients

Scale
  • 4 large eggs
  • 1 cup granulated sugar
  • 2/3 cup lightly packed light brown sugar
  • 1 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 2 cups peeled and grated carrots
  • 8 ounces crushed pineapple, drained
  • 2/3 cup chopped pecans or walnuts (optional)
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 3/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F and grease or line a baking pan.
  2. In a large bowl, whisk together eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract until smooth.
  3. In another bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined.
  5. Fold in grated carrots, drained crushed pineapple, and nuts if using.
  6. Spread batter into prepared pan.
  7. Bake for 15-18 minutes or until a toothpick inserted in the center comes out clean.
  8. While bars are baking, prepare cream cheese frosting by beating cream cheese, granulated sugar, egg yolk, and vanilla extract until smooth.
  9. Remove bars from oven, and swirl the cream cheese mixture on top using a skewer or butter knife.
  10. Return to oven and bake for an additional 5-10 minutes until frosting is set.
  11. Cool bars completely before cutting.

Notes

1. Do not overmix batter to keep bars tender.
2. Drain pineapple well to prevent excess moisture.
3. Store bars in refrigerator due to cream cheese frosting.
