Caramel Ritz Cracker Cookies

No-bake caramel sandwich cookies made with Ritz crackers, dulce de leche caramel, and dipped in a rich chocolate almond bark coating. These easy-to-make treats combine salty, sweet, and chocolate flavors for a perfect dessert.

  • 42 Ritz Crackers
  • 1 heaping cup dulce de leche caramel
  • 8 ounces semi-sweet chocolate chips
  • 8 ounces chocolate almond bark
  • Sprinkles or flake sea salt (optional for garnish)

Instructions

  1. Line a rimmed baking sheet with parchment paper.
  2. Place half of the Ritz crackers flat-side up on the baking sheet.
  3. Spread a generous layer of dulce de leche caramel on each cracker.
  4. Top with the remaining crackers, gently pressing to form sandwiches.
  5. Melt semi-sweet chocolate chips and chocolate almond bark together using a double boiler until smooth.
  6. Dip each sandwich into the melted chocolate to coat all sides evenly.
  7. Place the dipped cookies back on the parchment-lined baking sheet.
  8. Sprinkle with decorative sprinkles or flake salt if desired.
  9. Refrigerate the cookies for 30 minutes to 1 hour until the chocolate is completely set.

Notes

Use dulce de leche for a rich caramel flavor, but caramel dessert topping can be a substitute. For melting chocolate, a double boiler helps prevent burning. Optional garnishes like sea salt add a nice contrast to the sweetness. Store in the refrigerator for best texture and freshness.
