Caramel Apple Cheesecake

A rich caramel apple cheesecake featuring a graham cracker crust, creamy cheesecake filling with cinnamon-spiced apples, topped with a luscious caramel and apple topping.

  • 2 cups graham cracker crumbs
  • 2 tablespoons butter, melted
  • 1 1/2 cups canned apple pie filling
  • 2 (8-ounce) packages cream cheese, room temperature
  • 1/2 cup sugar
  • 1/4 teaspoon vanilla extract
  • 2 eggs, room temperature
  • 1/4 cup caramel topping
  • 1/2 cup apple pie filling for topping

Instructions

  1. Preheat oven and prepare a 9-inch springform pan with crust.
  2. Mix graham cracker crumbs with melted butter; press into bottom of pan.
  3. Spoon 1 1/2 cups apple pie filling evenly over crust.
  4. Beat cream cheese until fluffy, then add sugar, vanilla, and eggs; beat until smooth.
  5. Pour cream cheese mixture over the apple pie filling in the crust.
  6. Bake for 50-55 minutes or until center is set.
  7. Allow to cool to room temperature.
  8. Heat 1/4 cup caramel and 1/2 cup apple pie filling briefly, then spoon over cooled cheesecake as topping.
  9. Refrigerate before serving to set topping and flavors.

Notes

Use room temperature ingredients for smooth filling. Do not over-bake to prevent cracks. For extra flavor, use homemade caramel sauce and fresh apple pie filling.
