No-Bake Buckeyes Candy

Classic no-bake peanut butter and chocolate candy balls, known as Buckeyes, made with creamy peanut butter, butter, powdered sugar, and dipped in semi-sweet chocolate.

  • 2 cups creamy peanut butter (not natural peanut butter)
  • 1/2 cup (113 grams) unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • 12 ounces semi-sweet chocolate chips or melting wafers
  • 1 tablespoon butter or coconut oil (for chocolate coating)

Instructions

  1. In a large bowl, combine the softened butter, creamy peanut butter, powdered sugar, and vanilla extract. Use an electric mixer to beat until smooth and creamy.
  2. Roll the peanut butter mixture into 1-inch balls and place them on a parchment-lined baking sheet. Chill for at least 2 hours until firm.
  3. Melt the semi-sweet chocolate chips with 1 tablespoon butter or coconut oil in a microwave or double boiler until smooth.
  4. Using a fork or toothpick, dip each peanut butter ball halfway into the melted chocolate so that a circle of peanut butter remains visible resembling a buckeye nut.
  5. Return the dipped balls to the parchment-lined tray and refrigerate until the chocolate is set.

Notes

Use creamy peanut butter for the best texture. If the mixture is too sticky, add a bit more powdered sugar. You can add a pinch of salt or cinnamon for extra flavor if desired.
