Box Mix Turtle Cake

A rich and moist chocolate cake made from a box mix layered with a gooey caramel and pecan filling, topped with chocolate chips and frosting for an irresistible dessert.

  • 1 box German chocolate cake mix or Devil's Food cake mix
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • 1 bag (about 1112 oz) Kraft caramels, unwrapped
  • 1 stick (1/2 cup) butter
  • 1/4 cup evaporated milk
  • 12 ounces semisweet chocolate chips
  • 1 cup chopped pecans
  • 1 (16 ounce) can chocolate frosting (Coconut Pecan or chocolate frosting recommended)

Instructions

  1. Preheat oven to 350°F and grease a 13×9 inch cake pan with non-stick spray.
  2. Prepare the cake batter according to the box directions using the eggs, oil, and water.
  3. Pour half of the batter into the greased pan and bake for about 15 minutes.
  4. Meanwhile, melt the caramels, butter, and evaporated milk together in a medium saucepan over low heat, stirring constantly until smooth.
  5. Remove the partially baked cake from the oven and evenly pour the caramel mixture over it.
  6. Sprinkle the chopped pecans and semisweet chocolate chips over the caramel layer.
  7. Carefully spread the remaining cake batter over the top of the chocolate chip layer.
  8. Bake the cake for an additional 20-28 minutes or until a toothpick inserted near the center comes out with just a few moist crumbs.
  9. Allow the cake to cool for at least 30 minutes before frosting with the canned chocolate or coconut pecan frosting.
  10. Optional: Drizzle with caramel topping and sprinkle additional pecans before serving.

Notes

Use German chocolate cake mix for a richer coconut flavor; substitute Devil’s Food cake mix for a deeper chocolate taste. Be careful spreading the second layer of batter to avoid mixing. Serve with vanilla ice cream for an extra special treat.
