Bourbon Chicken with Broccoli

A quick and flavorful stir-fry featuring tender chicken thighs in a sweet and savory bourbon-soy sauce, paired with crisp broccoli florets, served over rice.

  • ½ cup low-sodium soy sauce
  • ½ cup packed brown sugar
  • ¼ cup water
  • 2 tablespoons bourbon
  • 1 teaspoon toasted sesame oil
  • ½ teaspoon pepper
  • 2 pounds boneless skinless chicken thighs, trimmed and cut into 1-inch pieces
  • 2 tablespoons cornstarch
  • 2 cups broccoli florets
  • 3 tablespoons vegetable oil, divided
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger

Instructions

  1. In a 2-cup measuring cup, combine soy sauce, brown sugar, water, bourbon, sesame oil, and pepper. Microwave until hot, 1-2 minutes, and stir to dissolve sugar.
  2. In a bowl, combine chicken, cornstarch, and 2 tablespoons of soy sauce mixture; stir to combine. In a nonstick skillet, heat 1 tablespoon oil until shimmering. Add broccoli and sauté for several minutes until bright green and slightly softened. Remove to a plate.
  3. Heat remaining 2 tablespoons oil in the same skillet over medium heat until shimmering. Add chicken mixture and cook, stirring occasionally, for about 10 minutes until cooked through. Add garlic, ginger, and remaining soy sauce mixture to skillet. Heat to a boil and cook until sauce is syrupy, about 6 minutes. Add broccoli, stir to coat, and serve over rice.

Notes

For extra heat, add a pinch of cayenne pepper to the sauce. Use low-sodium soy sauce to control saltiness. This dish reheats well and tastes even better the next day.
