Irresistible Boston Cream Pie Cupcakes

Delicious vanilla cupcakes filled with creamy custard and topped with rich chocolate ganache.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/2 cup whole milk
  • 1 cup vanilla custard or pudding
  • 4 oz semi-sweet chocolate, chopped
  • 1/2 cup heavy cream

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Beat butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
  4. Alternately add dry ingredients and milk, beginning and ending with flour mixture.
  5. Divide batter evenly among liners. Bake for 18-20 minutes. Cool completely.
  6. Cut a small hole in each cupcake and fill with custard.
  7. Heat cream until simmering, pour over chocolate, let sit 2 minutes, then stir until smooth.
  8. Spread ganache over filled cupcakes. Let set before serving.
