Boston Cream Donuts

Classic Boston cream donuts with a fluffy texture, creamy custard filling, and rich chocolate glaze.

For the Crust:

  • 2 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet active dry yeast
  • 1/2 cup warm milk
  • 2 large eggs
  • 1/4 cup unsalted butter, softened
  • 1/2 tsp salt
  • 1 cup vanilla custard or pastry cream
  • 4 oz semi-sweet chocolate
  • 1/2 cup heavy cream
  • 1 tbsp corn syrup (optional)

Instructions

1. Prepare the Crust:

  1. In a bowl, dissolve yeast in warm milk and let sit for 5 minutes until frothy. Mix in sugar, eggs, butter, and salt.
  2. Gradually add flour and knead until a smooth dough forms. Cover and let rise for 1 hour or until doubled.
  3. Roll out dough to 1/2-inch thickness and cut into rounds. Let rise again for 30 minutes.
  4. Fry donuts in 350°F oil until golden, about 1-2 minutes per side. Drain on paper towels.
  5. Fill a piping bag with custard and inject into each donut. Melt chocolate with heavy cream and corn syrup, then dip the tops of the donuts in the glaze.
  6. Let glaze set before serving.

Notes

You can customize the seasonings to taste.
