Blueberry Swirl Sugar Cookies

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup blueberry jam
  • 1 tablespoon powdered sugar (for dusting, optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture, mixing until combined.
  4. Drop tablespoon-sized portions of dough onto the prepared baking sheets. Make a small indentation in each cookie and swirl in a teaspoon of blueberry jam.
  5. Bake for 10-12 minutes, or until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  6. Dust with powdered sugar if desired before serving.
