Blueberry Pudding Cake

A delightful dessert with a moist cake layer and a juicy blueberry pudding bottom.

For the Crust:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 2 cups fresh blueberries
  • 1/2 cup brown sugar
  • 1 cup boiling water

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. In a bowl, whisk together flour, granulated sugar, baking powder, and salt. Stir in milk, melted butter, and vanilla until just combined.
  3. Spread batter evenly in the prepared dish. Scatter blueberries over the batter, then sprinkle brown sugar on top.
  4. Pour boiling water over the entire mixture (do not stir).
  5. Bake for 35-40 minutes until the top is golden and the pudding layer is bubbling.
  6. Let cool slightly before serving. Serve warm with ice cream if desired.
