For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 1/2 cup fresh blueberries
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together butter and sugar until light and fluffy. Add egg, vanilla, and lemon zest, mixing well.
  3. In another bowl, whisk flour, baking powder, and salt. Gradually mix dry ingredients into the wet mixture.
  4. Gently fold in blueberries. Drop tablespoon-sized dough onto the baking sheet, spacing them 2 inches apart.
  5. Bake for 12-15 minutes or until edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
