Blackberry Pistachio Dream Bars

A delightful dessert bar with a buttery crust, sweet blackberry filling, and crunchy pistachio topping.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 teaspoon salt
  • 1 cup blackberry jam
  • 1/2 cup chopped pistachios
  • 1/2 cup shredded coconut
  • 1/4 cup brown sugar
  • 2 tablespoons melted butter

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix flour, granulated sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  3. Press the mixture firmly into the prepared pan. Bake for 15 minutes or until lightly golden.
  4. Spread blackberry jam evenly over the baked crust.
  5. In another bowl, combine chopped pistachios, coconut, brown sugar, and melted butter. Sprinkle over the jam layer.
  6. Bake for another 15-20 minutes or until the topping is golden. Let cool completely before cutting into bars.

Notes
