For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1/4 teaspoon salt
- 1 cup blackberry jam
- 1/2 cup chopped pistachios
- 1/2 cup shredded coconut
- 1/4 cup brown sugar
- 2 tablespoons melted butter
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix flour, granulated sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Press the mixture firmly into the prepared pan. Bake for 15 minutes or until lightly golden.
- Spread blackberry jam evenly over the baked crust.
- In another bowl, combine chopped pistachios, coconut, brown sugar, and melted butter. Sprinkle over the jam layer.
- Bake for another 15-20 minutes or until the topping is golden. Let cool completely before cutting into bars.
