For the Crust:
1 box fudge brownie mix
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
1/4 cup milk
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1/2 cup mini chocolate chips
1/2 cup chopped maraschino cherries, drained
12 oz dark chocolate melting wafers
1 tbsp coconut oil
Instructions
1. Prepare the Crust:
Prepare brownie mix according to package directions and bake in a 9×9 pan. Let cool completely, then cut into 1-inch cubes.
Make cookie dough by creaming butter and sugars. Mix in milk and vanilla. Gradually add flour until combined. Fold in chocolate chips and cherries.
Flatten a tablespoon of cookie dough in your palm. Place a brownie cube in center and wrap dough around it. Roll into smooth balls. Freeze for 30 minutes.
Melt chocolate wafers with coconut oil. Dip each ball using a fork, letting excess drip off. Place on parchment paper to set.
Refrigerate for 1 hour before serving. Store leftovers in airtight container.
