Biscoff Cake

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup Biscoff cookie butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/2 cup crushed Biscoff cookies

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and line a 9-inch round cake pan.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and Biscoff cookie butter.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Alternately add the dry ingredients and milk to the wet mixture, mixing until just combined.
  6. Fold in crushed Biscoff cookies, then pour batter into the prepared cake pan.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
