For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup Biscoff cookie butter
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup milk
- 1/2 cup crushed Biscoff cookies
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and line a 9-inch round cake pan.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and Biscoff cookie butter.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Alternately add the dry ingredients and milk to the wet mixture, mixing until just combined.
- Fold in crushed Biscoff cookies, then pour batter into the prepared cake pan.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
