For the Crust:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/2 cup Biscoff cookie spread
- 1 cup heavy cream
- 1/4 cup powdered sugar
- Crushed Biscoff cookies for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
- In a bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract and Biscoff spread until fully combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients.
- Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let cool completely.
- For the frosting, whip heavy cream and powdered sugar until stiff peaks form. Spread over the cooled cake and garnish with crushed Biscoff cookies.
