For the Crust:
2 cans (5 oz each) tuna, drained
1/4 cup mayonnaise
1/4 cup diced celery
2 tablespoons diced red onion
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
8 slices bread (sourdough or whole wheat)
4 slices cheddar cheese
2 tablespoons butter, softened
Instructions
1. Prepare the Crust:
In a bowl, mix tuna, mayonnaise, celery, red onion, lemon juice, salt, and pepper until well combined.
Spread the tuna mixture evenly on 4 slices of bread. Top each with a slice of cheddar cheese and cover with the remaining bread slices.
Butter the outer sides of each sandwich.
Heat a skillet or griddle over medium heat. Place sandwiches in the skillet and cook for 3-4 minutes per side, or until golden brown and cheese is melted.
