Stuffed Bell Peppers

Colorful bell peppers stuffed with a savory mixture of ground beef, rice, and seasonings, then baked to perfection.

For the Crust:

  • 4 large bell peppers (any color)
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes.
  2. In a skillet, brown the ground beef over medium heat. Drain excess fat. Add onion and garlic, cooking until softened.
  3. Stir in cooked rice, half the tomato sauce, oregano, salt, and pepper. Simmer for 5 minutes.
  4. Stuff each bell pepper with the beef mixture and place in a baking dish. Pour remaining tomato sauce over peppers.
  5. Cover with foil and bake for 25 minutes. Remove foil, sprinkle with cheese, and bake uncovered for 5 more minutes.

Notes

You can customize the seasonings to taste.
