For the Crust:
- 1 9-inch pie crust, pre-baked
- 4 cups fresh strawberries, hulled and sliced
- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1/2 cup water
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- Whipped cream for serving (optional)
Instructions
1. Prepare the Crust:
- In a medium saucepan, combine sugar and cornstarch. Gradually stir in water and lemon juice.
- Cook over medium heat, stirring constantly, until mixture thickens and becomes clear.
- Remove from heat and stir in vanilla extract. Let the mixture cool slightly.
- Gently fold in the sliced strawberries until well coated.
- Pour the strawberry mixture into the pre-baked pie crust and spread evenly.
- Refrigerate for at least 2 hours or until set. Serve with whipped cream if desired.
