For the Crust:
- 2 9-inch pie crusts (homemade or store-bought)
- 6 cups fresh strawberries, hulled and sliced
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/2 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 tablespoon unsalted butter, diced
- 1 egg, beaten (for egg wash)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Place one pie crust into a 9-inch pie dish and set aside.
- In a large bowl, mix strawberries, sugar, cornstarch, vanilla extract, and lemon juice until well combined.
- Pour the strawberry mixture into the prepared pie crust. Dot the top with diced butter.
- Cover with the second pie crust. Crimp the edges to seal and cut slits in the top to allow steam to escape.
- Brush the top crust with beaten egg for a golden finish.
- Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
- Allow the pie to cool completely before slicing and serving.
