For the Crust:

  • 2 9-inch pie crusts (homemade or store-bought)
  • 6 cups fresh strawberries, hulled and sliced
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter, diced
  • 1 egg, beaten (for egg wash)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Place one pie crust into a 9-inch pie dish and set aside.
  2. In a large bowl, mix strawberries, sugar, cornstarch, vanilla extract, and lemon juice until well combined.
  3. Pour the strawberry mixture into the prepared pie crust. Dot the top with diced butter.
  4. Cover with the second pie crust. Crimp the edges to seal and cut slits in the top to allow steam to escape.
  5. Brush the top crust with beaten egg for a golden finish.
  6. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  7. Allow the pie to cool completely before slicing and serving.
