For the Crust:
2 1/2 cups fresh strawberries, hulled and sliced
1 pre-made pie crust
3/4 cup granulated sugar
3 tablespoons cornstarch
1/2 cup water
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
1 tablespoon butter
Instructions
1. Prepare the Crust:
Preheat oven to 375°F (190°C). Roll out the pie crust and place it in a 9-inch pie dish. Trim and crimp the edges.
In a saucepan, combine sugar, cornstarch, water, and lemon juice. Cook over medium heat, stirring constantly, until the mixture thickens and becomes clear.
Remove from heat and stir in vanilla extract and butter. Gently fold in the sliced strawberries until well coated.
Pour the strawberry mixture into the prepared pie crust. Bake for 30 minutes or until the crust is golden brown.
Allow the pie to cool completely before slicing and serving.
