For the Crust:
- 1 lb fresh scallops, patted dry
- 2 tbsp olive oil
- 1 tbsp butter
- 1 cup heavy cream
- 1 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional for extra heat)
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium-high heat. Season scallops with salt and black pepper.
- Add scallops to the skillet and sear for 2-3 minutes per side until golden brown. Remove and set aside.
- In the same skillet, melt butter and stir in Cajun seasoning, garlic powder, paprika, and cayenne pepper. Cook for 1 minute.
- Pour in heavy cream and simmer for 3-4 minutes until the sauce thickens slightly.
- Return scallops to the skillet and spoon the sauce over them. Cook for another minute to heat through.
- Garnish with fresh parsley and serve immediately.
