Roasted Chicken with Garlic and Herbs

For the Crust:

  • 1 whole chicken (about 45 pounds)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, halved

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix minced garlic, rosemary, thyme, olive oil, salt, and pepper to create a herb paste.
  3. Rub the herb paste all over the chicken, including under the skin.
  4. Place the lemon halves inside the chicken cavity.
  5. Place the chicken on a roasting rack in a baking dish and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 10 minutes before carving and serving.
