Loaded Potato Ranch Chicken Casserole

For the Crust:

  • 4 cups diced potatoes
  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup ranch dressing
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, mix the diced potatoes, shredded chicken, garlic powder, onion powder, salt, and pepper.
  3. Spread the potato-chicken mixture evenly in the prepared baking dish.
  4. In a separate bowl, combine sour cream and ranch dressing, then spread over the potato-chicken mixture.
  5. Sprinkle shredded cheddar cheese and crumbled bacon evenly over the top.
  6. Bake for 25-30 minutes or until potatoes are tender and cheese is bubbly.
  7. Garnish with chopped green onions before serving.
