For the Crust:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 2 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 2 tbsp olive oil
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 2–3 tbsp water (as needed for consistency)
- 1 tbsp chopped fresh parsley (optional for garnish)
Instructions
1. Prepare the Crust:
- In a food processor, combine chickpeas, tahini, garlic, lemon juice, olive oil, cumin, and salt.
- Process until smooth, scraping down the sides as needed.
- Add water, 1 tablespoon at a time, until desired consistency is reached.
- Transfer to a serving bowl and garnish with chopped parsley and a drizzle of olive oil if desired.
Notes
You can customize the seasonings to taste.
