Absolutely Ultimate Potato Soup

A creamy and comforting potato soup recipe perfect for cold winter days, featuring bacon, celery, onion, garlic, and potatoes in a rich sauce topped with more bacon and cheese.

  • 6 slices of bacon, diced
  • 1 large onion, chopped
  • 3 stalks of celery, chopped
  • 3 cloves of garlic, minced
  • 2 pounds of potatoes, peeled and diced
  • 1/2 cup of all-purpose flour
  • 2 cups of chicken broth
  • 1 cup of milk
  • 1/2 cup of heavy cream
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 cup of shredded cheddar cheese

Instructions

  1. Cook the diced bacon in a large pot over medium heat until crispy. Remove the bacon from the pot with a slotted spoon and set aside.
  2. Add the chopped onion, celery, and minced garlic to the pot. Cook until the vegetables are tender.
  3. Add the diced potatoes, flour, chicken broth, milk, heavy cream, thyme, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  4. Use an immersion blender to puree the soup until it reaches your desired consistency. Alternatively, you can transfer some of the soup to a blender and blend until smooth, then return it to the pot.
  5. Stir in the cooked bacon and shredded cheddar cheese until the cheese is melted and well combined.
  6. Serve hot, garnished with additional bacon and cheese if desired.
