For the Crust:
2 cups all-purpose flour
1 1/2 cups granulated sugar
3 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
3/4 cup milk
2 large eggs
1 tsp vanilla extract
2 cups fresh blueberries
2 cups heavy whipping cream
1/4 cup powdered sugar
Instructions
1. Prepare the Crust:
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together flour, sugar, baking powder, and salt. Add softened butter, milk, eggs, and vanilla. Beat until smooth.
Divide batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Cool completely.
Whip heavy cream and powdered sugar until stiff peaks form.
Place one cake layer on a serving plate. Spread half the whipped cream over the top and sprinkle with 1 cup blueberries. Top with the second cake layer, remaining whipped cream, and remaining blueberries.
