For the Crust:

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 2 tbsp butter, melted
  • 1/4 cup fresh cilantro, chopped

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Stir in curry powder and cook for 1 minute until fragrant. Pour in vegetable broth and coconut milk, bring to a simmer.
  3. In a bowl, mix flour, baking powder, and salt. Add milk and melted butter, stir until a dough forms.
  4. Drop spoonfuls of the dumpling dough into the simmering soup. Cover and cook for 15 minutes.
  5. Garnish with fresh cilantro before serving.
