For the Crust:

  • 2 lbs pork shoulder, cut into chunks
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp oregano
  • 4 cloves garlic, minced
  • 1 orange, juiced
  • 1/2 cup chicken broth
  • 2 tbsp vegetable oil
  • 8 small corn tortillas
  • 2 avocados
  • 2 jalapeños, roasted
  • 1 lime, juiced
  • 1/4 cup cilantro, chopped
  • 1/2 red onion, diced

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F. Season pork with salt, pepper, cumin, oregano, and garlic.
  2. Place pork in a Dutch oven. Add orange juice and chicken broth. Cover and braise for 2 hours until tender.
  3. Shred pork and crisp in a skillet with oil over medium-high heat until golden brown.
  4. For the avocado topping, mash avocados with roasted jalapeños, lime juice, cilantro, and red onion.
  5. Warm tortillas and assemble tacos with crispy carnitas and avocado mixture.
