For the Crust:
1 lb boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp chili powder
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp paprika
1/4 tsp salt
1/4 tsp black pepper
8 small corn tortillas
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup chopped cilantro
1/4 cup diced red onion
1/2 cup shredded cheese
1/4 cup sour cream
1 lime, cut into wedges
Instructions
1. Prepare the Crust:
In a bowl, mix the chili powder, cumin, garlic powder, paprika, salt, and black pepper.
Heat olive oil in a skillet over medium heat. Add the chicken and sprinkle the spice mix over it. Cook for 6-8 minutes per side or until fully cooked. Remove from heat and shred the chicken.
Warm the tortillas in a dry skillet or microwave for 30 seconds.
Assemble the tacos by placing shredded chicken on each tortilla, then topping with lettuce, tomatoes, cilantro, red onion, cheese, and a dollop of sour cream. Serve with lime wedges.
