For the Crust:
- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1/4 cup diced red onion
- 1/2 cup shredded cheese
- 1/4 cup sour cream
- 1 lime, cut into wedges
Instructions
1. Prepare the Crust:
- In a bowl, mix the chili powder, cumin, garlic powder, paprika, salt, and black pepper.
- Heat olive oil in a skillet over medium heat. Add the chicken and sprinkle the spice mix over it. Cook for 6-8 minutes per side or until fully cooked. Remove from heat and shred the chicken.
- Warm the tortillas in a dry skillet or microwave for 30 seconds.
- Assemble the tacos by placing shredded chicken on each tortilla, then topping with lettuce, tomatoes, cilantro, red onion, cheese, and a dollop of sour cream. Serve with lime wedges.
