For the Crust:
- 1 cup unsalted butter, softened
- 1 1/2 cups packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups butterscotch chips
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Combine flour, baking soda, and salt in a separate bowl. Gradually add to the butter mixture, mixing well. Fold in butterscotch chips.
- Drop by rounded tablespoons onto prepared baking sheets, spacing 2 inches apart.
- Bake for 10-12 minutes or until edges are lightly golden. Let cool on baking sheets for 2 minutes before transferring to wire racks.
