Butterscotch Cookies

Soft and chewy butterscotch cookies with a rich caramel-like flavor.

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 1/2 cups packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups butterscotch chips

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  3. Combine flour, baking soda, and salt in a separate bowl. Gradually add to the butter mixture, mixing well. Fold in butterscotch chips.
  4. Drop by rounded tablespoons onto prepared baking sheets, spacing 2 inches apart.
  5. Bake for 10-12 minutes or until edges are lightly golden. Let cool on baking sheets for 2 minutes before transferring to wire racks.
