For the Crust:
- 2 cups cooked black beans (or 1 can, drained and rinsed)
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Prepare the Crust:
- In a large bowl, combine black beans, corn, red bell pepper, red onion, avocado, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, cumin, salt, and black pepper.
- Pour the dressing over the salad and gently toss to combine. Serve immediately or refrigerate for up to 2 hours before serving.
