Crispy, golden zucchini fries made healthier in the air fryer with minimal oil.

For the Crust:

  • 2 medium zucchinis, cut into fries
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • Cooking spray

Instructions

1. Prepare the Crust:

  1. Preheat air fryer to 400°F (200°C).
  2. In a bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
  3. Dip zucchini fries in beaten eggs, then coat evenly with the breadcrumb mixture.
  4. Place fries in the air fryer basket in a single layer. Lightly spray with cooking spray.
  5. Air fry for 10-12 minutes, flipping halfway, until golden and crispy.

Notes
