For the Crust:
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 3 tbsp olive oil
- 2 tbsp lime juice
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
1. Prepare the Crust:
- In a large bowl, combine black beans, kidney beans, chickpeas, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, cumin, salt, and black pepper.
- Pour the dressing over the bean mixture and toss gently to combine. Refrigerate for at least 30 minutes before serving.
