Barbecue Brisket Melt

Perfectly smoked brisket, caramelized onions, and gooey cheese are sandwiched between slices of crusty sourdough bread, creating a symphony of flavors and textures. The brisket is infused with Bear & Burton’s The W Sauce and Cattleman’s Grill Lone Star Brisket Rub, complemented by sweet caramelized onions and a melty combination of American and provolone cheese, toasted to perfection and served with barbecue sauce for dipping.

  • 1 brisket flat
  • Bear & Burton’s The W Sauce (Worcestershire)
  • Cattleman’s Grill Lone Star Brisket Rub
  • 4 tbsp unsalted butter, divided
  • 1 tbsp extra virgin olive oil
  • 2 sweet onions, sliced thin
  • 1 tsp Jacobsen Salt Co. Black Garlic Salt
  • 4 large slices sourdough bread
  • 4 slices provolone cheese
  • 4 slices American cheese
  • Smoke on Wheels Bootleg Barbecue Sauce

Instructions

  1. Prepare the brisket flat by seasoning it with Cattleman’s Grill Lone Star Brisket Rub and marinating with Bear & Burton’s The W Sauce.
  2. Smoke the brisket overnight at low temperature until tender.
  3. Slice the brisket thinly once cooked and rested.
  4. In a skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat.
  5. Add the thinly sliced sweet onions and sprinkle with black garlic salt; caramelize the onions until golden and soft.
  6. Butter one side of each slice of sourdough bread.
  7. On the unbuttered side of two slices, layer provolone cheese, sliced brisket, caramelized onions, and American cheese.
  8. Top with the remaining bread slices, buttered side out.
  9. Heat a griddle or skillet over medium heat and toast the sandwiches until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
  10. Serve hot with Smoke on Wheels Bootleg Barbecue Sauce for dipping.

Notes

For best flavor, use a well-smoked brisket and allow it to rest before slicing. Caramelizing the onions slowly enhances their sweetness, balancing the savory brisket. Serve immediately to enjoy the cheese melted perfectly.
