Banana Walnut Dream Cake

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3 ripe bananas, mashed (about 1 1/2 cups)
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, and cinnamon.
  3. In another bowl, mix mashed bananas, oil, eggs, and vanilla until well combined.
  4. Gradually add the dry ingredients to the banana mixture, stirring just until moistened.
  5. Fold in chopped walnuts.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For best flavor, use very ripe bananas. Toasting the walnuts before adding them enhances their taste. This cake can be stored at room temperature for up to 3 days or refrigerated for up to a week.
