A moist and flavorful banana cake layered with creamy frosting and crunchy walnuts, perfect for any celebration or a special treat.

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1/2 cup sour cream
  • 1 cup chopped walnuts
  • For the frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Mix in mashed bananas and sour cream until combined.
  6. Gradually add the flour mixture to the banana mixture, mixing just until incorporated.
  7. Fold in 1 cup chopped walnuts.
  8. Divide batter evenly between prepared pans and smooth tops.
  9. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  10. Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
  11. For the frosting, beat cream cheese and butter until smooth and creamy.
  12. Gradually add powdered sugar and vanilla extract, beating until fluffy.
  13. Spread frosting over the top of one cake layer, place the second layer on top, and frost the top and sides of the cake.
  14. Garnish with remaining chopped walnuts.
  15. Refrigerate for at least 1 hour before serving for best flavor and texture.

Notes

Use very ripe bananas for the best flavor and sweetness. Chilling the cake before serving helps the frosting set nicely. Walnuts can be toasted for extra crunch and flavor.
