For the Crust:
- 2 ripe bananas, mashed
- 2 cups almond milk (or any milk of choice)
- 1/4 cup chia seeds
- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla extract
- Pinch of cinnamon (optional)
Instructions
1. Prepare the Crust:
- In a mixing bowl, combine the mashed bananas, almond milk, chia seeds, honey, vanilla extract, and cinnamon (if using). Stir well to combine.
- Cover the bowl and refrigerate for at least 4 hours or overnight, stirring occasionally to prevent clumping.
- Once the pudding has thickened, give it a final stir and serve chilled. Top with sliced bananas or nuts if desired.
