Irresistible Banana Caramel Roll Cake

A decadent roll cake filled with creamy banana filling and drizzled with rich caramel sauce.

For the Crust:

  • 3 large eggs
  • 1 cup granulated sugar
  • 1/3 cup water
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 ripe bananas, mashed
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 cup caramel sauce

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a jelly roll pan with parchment paper.
  2. Beat eggs in a large bowl until thick and pale. Gradually add sugar, water, and vanilla, mixing well.
  3. In a separate bowl, whisk flour, baking powder, and salt. Fold into wet ingredients until just combined.
  4. Spread batter evenly in prepared pan. Bake for 12-15 minutes until cake springs back when touched.
  5. Turn cake onto a clean towel dusted with powdered sugar. Roll cake and towel together from the short side. Cool completely.
  6. Whip heavy cream with powdered sugar until stiff peaks form. Fold in mashed bananas.
  7. Unroll cake, spread banana filling evenly, then re-roll without the towel. Drizzle with caramel sauce before serving.
