Balsamic Blackberry Bliss Grilled Cheese

A sophisticated grilled cheese sandwich featuring creamy brie, a sweet and tangy blackberry balsamic jam, and fresh thyme, creating a perfect balance of savory and fruity flavors.

  • 2 cups blackberries
  • 3 tablespoons balsamic vinegar
  • 6 tablespoons sugar
  • 2 tablespoons lemon juice
  • Pinch of kosher salt
  • 300 grams double cream brie cheese
  • 1 tablespoon chopped fresh thyme
  • 8 slices bread (such as sourdough or artisan bread)
  • Butter for spreading

Instructions

  1. In a small saucepan, combine blackberries, sugar, balsamic vinegar, lemon juice, and kosher salt.
  2. Bring to a boil over medium-high heat, then reduce heat and simmer, crushing berries with a potato masher or wooden spoon until thickened into a jam, about 7 to 10 minutes. Set aside to cool.
  3. Slice brie cheese into 1/4 inch thick slices.
  4. Heat a skillet over medium heat. Butter one side of four bread slices and place butter side down in the skillet.
  5. Top each bread slice with brie slices and sprinkle with chopped thyme. Cook until bread is golden and brie begins to soften.
  6. Spread a thick layer of blackberry jam on the remaining bread slices and place jam side down over the brie-topped bread.
  7. Butter the top side of the bread and carefully flip the sandwich. Cook until the other side is golden brown and the brie is fully melted.
  8. Remove sandwiches from skillet and let cool for a couple of minutes before cutting in half and serving.

Notes

For best results, allow the blackberry balsamic jam to cool completely before assembling the sandwich to prevent sogginess. Use a moderate heat to ensure the brie melts without burning the bread. Fresh thyme adds a lovely herbal note but can be omitted if unavailable.
