For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/3 cup granulated sugar
- 1 large egg yolk
- 1 tsp vanilla extract
- 1/2 cup finely chopped walnuts
- 1/4 cup honey
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
1. Prepare the Crust:
- Whisk flour, cinnamon, cloves, and salt in a bowl. In another bowl, beat butter and sugar until fluffy. Mix in egg yolk and vanilla.
- Gradually add dry ingredients to form a dough. Divide into two disks, wrap in plastic, and chill for 1 hour.
- Preheat oven to 350°F. Roll dough to 1/8-inch thickness and cut into 2-inch rounds. Bake for 10-12 minutes until edges are golden. Cool completely.
- For filling: Pulse walnuts in a food processor until fine. Mix with honey, cream cheese, and powdered sugar until smooth.
- Spread filling on half the cookies and sandwich with remaining cookies. Dust with powdered sugar if desired.
