Baked Salmon in Foil with Asparagus

A simple and healthy baked salmon dish with asparagus, cooked in foil for easy cleanup.

For the Crust:

  • 4 salmon fillets (6 oz each)
  • 1 lb asparagus, trimmed
  • 2 tbsp olive oil
  • 1 lemon, sliced
  • 2 cloves garlic, minced
  • 1 tsp dried dill
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. Cut 4 large pieces of foil and place salmon fillets in the center of each.
  3. Divide asparagus evenly among the foil pieces, placing them next to the salmon.
  4. Drizzle olive oil over salmon and asparagus. Sprinkle with garlic, dill, salt, and pepper. Top with lemon slices.
  5. Fold the foil over the salmon and asparagus, sealing the edges tightly to create a packet.
  6. Bake for 15-20 minutes or until salmon is cooked through. Serve immediately.
