For the Crust:
- 4 salmon fillets (6 oz each)
- 1 lb asparagus, trimmed
- 2 tbsp olive oil
- 1 lemon, sliced
- 2 cloves garlic, minced
- 1 tsp dried dill
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- Cut 4 large pieces of foil and place salmon fillets in the center of each.
- Divide asparagus evenly among the foil pieces, placing them next to the salmon.
- Drizzle olive oil over salmon and asparagus. Sprinkle with garlic, dill, salt, and pepper. Top with lemon slices.
- Fold the foil over the salmon and asparagus, sealing the edges tightly to create a packet.
- Bake for 15-20 minutes or until salmon is cooked through. Serve immediately.
