  • 4 firm pears (Bosc or Anjou), peeled, cored, stems left on
  • 2 tablespoons fresh lemon juice
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla paste or extract
  • 3 tablespoons unsalted butter, cubed
  • 1 cup mixed fresh berries (blueberries, raspberries, blackberries)
  • Pinch of salt

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel the pears, remove the cores, and leave the stems on.
  3. Arrange the pears cut side up in a baking pan.
  4. Drizzle the pears with lemon juice and vanilla paste.
  5. Sprinkle brown sugar, cinnamon, nutmeg, and a pinch of salt evenly over the pears.
  6. Distribute the cubed butter around and on top of the pears.
  7. Bake pears for 30 minutes.
  8. Turn the pears cut side down, spoon the caramelized juices over the pears, and scatter the mixed berries around them.
  9. Bake for an additional 30 minutes or until pears are soft and caramelized and berries are tender.
  10. Serve warm, spooning the caramel sauce and berries over the pears.

The caramel sauce forms naturally from the pear juices, brown sugar, and butter during baking, creating a rich and flavorful glaze. Using firm pears like Bosc or Anjou helps the fruit hold its shape while becoming tender. Fresh berries add a bright contrast to the sweet, spiced pears.
