Baked Burrito Casserole

A hearty and flavorful baked casserole combining seasoned ground beef, rice, beans, cheese, and a creamy sauce, layered and baked to bubbly perfection.

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup cooked rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup sour cream
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Aluminum foil for covering

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and green bell pepper; sauté until softened.
  3. Add ground beef to the skillet and cook until browned. Drain excess fat.
  4. Stir in taco seasoning and a splash of water; cook until well combined and thickened.
  5. In a large mixing bowl, combine cooked rice, black beans, sour cream, and salsa.
  6. In a 9×13 inch baking dish, spread half of the beef mixture evenly.
  7. Layer half of the rice and bean mixture over the beef.
  8. Sprinkle with 1 cup of shredded cheddar cheese.
  9. Repeat layers with remaining beef, rice mixture, and top with remaining cheese.
  10. Cover the casserole tightly with aluminum foil.
  11. Bake in preheated oven for 25-30 minutes until bubbly.
  12. Remove foil and bake an additional 5 minutes to brown the cheese.
  13. Let stand for 5 minutes before serving.

Notes

Covering the casserole with foil during baking keeps it moist and helps the flavors meld. Removing the foil at the end allows the cheese to brown nicely. You can customize with your favorite beans or add jalapeños for extra heat.
