Yukon Gold Roasted Potatoes With Bacon, Onion and Garlic

A savory roasted potato dish featuring Yukon Gold potatoes, crispy bacon, onions, and garlic, seasoned with thyme and cooked in bacon fat for rich flavor.

  • 10 slices bacon
  • 5 large Yukon Gold potatoes, unpeeled and cut lengthwise into 4 large wedges
  • 3 medium onions, cut into 4 wedges
  • 20 garlic cloves, peeled
  • 3 teaspoons dried thyme
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 425ºF.
  2. In a large roasting pan, cook the bacon in the oven until crisp, about 10 minutes. Remove bacon, crumble, and set aside. Do not drain the bacon fat from the pan.
  3. Place the potato wedges skin-side down in the roasting pan and toss to coat in the bacon fat. Add oil if the pan seems too dry.
  4. Add the onion wedges to the pan; they will separate during cooking.
  5. Scatter the peeled garlic cloves around the potatoes and onions.
  6. Sprinkle the vegetables with dried thyme, salt, and black pepper.
  7. Roast uncovered for 40-45 minutes, or until potatoes are fork-tender and browned.
  8. Before serving, sprinkle with crumbled bacon and adjust seasoning with additional salt and pepper if desired.

Notes

Cooking the potatoes in bacon fat adds deep flavor and crispness. Be sure not to drain the bacon fat before roasting. Adjust garlic quantity to taste for milder or stronger flavor.
